    hi all, been making a wedding cake for my son and because it's a bit of a quirky design I've got tons of fruitcake left over. Unfortunately they're mainly little bits- not suitable for a cake slab if you see what I mean so I'd like ideas for what I could use them for! Any one got any inspiration!?

    Would chocolate flavour go with the cake??
    I was thinking of melting a slab of chocolate and crumbling/pressing the cake onto it and leaving the chocolate to set in the fridge. Then cut wedges,
    I'd eat that!!!

      or how about nigella's little christmas puddings - just substitute the used christmas puddings for your cake.

                Cannot wait to see the pics. From the right angle of course. How about using the crumbly bits in a lemon curd pavlova thingy.

                  Did you see Delia on TV last night? She used leftover Crimble pud to make Christmas crackers. Just wrapped the bits of pud in filo pastry, made into a cracker shape, brushed with melted butter and shoved in the oven until the pastry was cooked. Would no doubt work for fruitcake as well.

                    Aah my thoughts exactly Northmaid - except that she used a special pastry called feuilles de brick - a Tunisian pastry : apparently available from Waitrose! (She says it is 'much nicer than filo'. Some of us will remember the huge panic for liquid glucose when she made her chocolate torte, then the craze for cranberries, unobtainable one year after she recommended them - now this is the latest Delia must have ingredient! )
                    Whooops - now what are the dogs getting up to?

                      Try mixing the fruitcake into softened vanilla icecream with a touch of whiskey/brandy/rum whichever you prefer, and then put back into the freezer. I have done this with Christmas pud, it makes for a slightly lighter dessert after a big meal.

                        some form of bread and butter style pudding? using apricot jam on the slices.
                        maybe a triffle?
                        Some form of tirimisu?
