Ok well there's no point denying it, I am a big fan of HFW, but this cake is just SUPERB and one of the best cakes I have ever eaten! (Even my teenage son ate it...so thats saying something )
300g unsalted butter, softened
250g golden caster sugar
4 medium eggs
150g wholemeal self raising flour
150g ground almonds
1 teaspoon baking powder (I didnt use this and it turned out fine)
50g flaked almonds
4 tablespoons runny honey
grease 23cm springform cake tin and line base with baking paper. Handy hint place on baking sheet as some of the butter may seep out during cooking.
Put the butter and sugar in large bowl and beat thoroughly until very light and fluffy. Beat in eggs one at a time, with a tablespoon of the flour. Fold in ground almonds, then sift over remaining flour and carefully fold in.
Scrape mixture into baking tin and scatter flaked almonds on top. Place in preheated oven at 170/gas 3 (I used 4) and bake for approx 45 mins or until a skewer comes out clean (NB It was about an hour and ten mins in my oven)
Remove from oven and while cake still hot evenly trickle the honey over the surface. It may trickle towards the middle but dont worry about that. Place tin with cake in on wire rake and leave to cool abit before turning out.
Lovely cold but DELICIOUS warm!
