Cake Makes The World A Better Place: Millionaire's Shortbread

If I had a vast supply - I'd probably skim them across the lake.
Excuse me, could we have an eel? You've got eels down your leg.

NOOOOOOOO!!! You need proper shortbread for that one!

I would crush them and bind with melted butter and use for lemon meringue pie bases - the sweetness of the digestives goes lovely with the tang of the lemon filling.

You could turn them into biscuit and caramel chocolate bars like I made.
Each bar uses less than one biscuit, so you'd need to make

Melt some Dark chocolate/butter and golden syrup in a pan.Once cooled add a jolly good glug of Baileys(Coops cheap stuff will suffice)...or alternatively soak some raisns,if you like them and then add that.
Once melted break up your biccies into random sized pieces and mix with the chocolate mixture.
You can then either put it in a lined tray and leave to set or make little truffles.
Very yummy either way.(just don't tell too many peeps...they assume I slave away in the kitchen for hours making it!)
