Gosh I'm now spoilt for choice. They all sound delicious. I think I might try Bren's idea as I've parsnips and swede as well as a tin of cannellini beans in the cupboard.

Ok tea over. That recipe of Bren's was yummy. Didn't have carrots so used swede and added a sploosh of Worcester sauce and a sprinkle of herbs de provence. Everyone cleared their plates even youngest who usually would pick out the parsnips and swede!
Now confession time...Didn't have enough potatoes to do mash so...
looked in the freezer and..... used tesco's frozen mash (hangs head in shame.
Anyway it was all finished off with a piece of chocolate and beetroot cake (homemade)S*d the housework I have a lottie to dig
