          I use both a ricer and a masher (not for the same spuds, it depends on the mood and the urgency of need for mash) but I agree with the tip to let the steam come off the potatoes before continuing the process, makes for a fluffier mash.
          However I have to disagree with the comment that if using a ricer, you make puree'd potato. I think that consistency of mash is awful. I think it's more to do with the amount of butter/cream etc added.
          I saw James Martin on tele saying you should use the same weight of butter as the weight of spud. It looked like yellow wallpaper paste when he finished.

          I add black pepper, butter and either cream or milk, and possibly some whole grain mustard depending on what it's being served with. Or cheddar and parmesan if having it with bolognese, my current fave.
          My teenage son however has just mashed potato, nothing added other than the salt the potatoes were cooked in.
          It takes all sorts.

            it's one of these. Much beloved of posh chefs and my heroes The Hairy Bikers.

            However I got mine from Morrisons for about a fiver so ignore the £11:99 price tag.

                Just DON'T use a hand blender; you end up with wallpaper paste - it chops all the starch up and BLEUGH.

                I crush ours, for the adults and mash then whisk for the DSD;
