Beetroot and Chocolate Cake
250g cooked and peeled beetroot
3 lge eggs
1 tsp vanilla extract
200ml sunflower oil
225g caster sugar
180g plain flour
75g cocoa powder
2 tsp baking powder
100g butter
200g icing sugar
40g white chocolate
Oven180C/350f/gas mark 4
Lined 23 cm cake tin
Puree the beetroot in a food processor.
Add eggs one at a time then the vanilla and oil, mix until smooth.
Mix in the sugar.
Sieve the flour, cocoa powder and baking powder into a bowl and make a well in the middle.
Add the beetroot mixture and fold in.
Pour into tin and bake for 30-40 mins until firm when pressed.
Cream butter until soft.
Beat in icing sugar.
Beat in melted chocolate.
Spread over cooled cake.
