I just made a Leek, Onion and Parsnip soup and I must say it was fantastic! I follwed Delia's recipe but substituted the 2 potatoes for 2 medium parsnips.
From memory it was something like:
50gms butter
4 x Leeks
1 x Onion
2 x parsnips
850ml chicken stock
275ml milk
salt and pepper to taste.
