  • Roasted carrots with onion and rosemary.

    When i were visiting in Yorkshire this seasoned Yorkshire wife showed me how to make the sweetest , best carrots you ever did taste.

    First chop into long fingers your carrots, or in half short ones, chop an onion an pick a large sprig of fresh rosemary ( dried will be ok).
    Par boil carrots until starting to get tender and then drain an add them to the roasting pan ( with the potatoes if there is room), throw in handfuls of the onion, drizzle with veg oil and then shred the Rosemary on top.

    All you have to do now is roast them along with your tatties an other vedge

    The onion adds a sweetness to the roasted carrots an the whole effect is wonderful.

    I've been Roasting carrots for donkeys years (just like parsnip).
    It's amazing how many people still havn't heard of this method. I got the idea from my Italian ex in-laws.

    I just put the carrots in whole (depending on the size). I tend to find though, that no sweetening is required. The longer they are roasted, the sweeter they become. To my taste, some veg can get 'too' sweet. I do also roast whole onions as well,,,, but they need an eye keeping on them or they will burn. They don't need as long as the other veg.
