German mustard?
Hi JD, I was brought up on English mustard, never caught on to French mustards, love German mustard! The sort you spread lavishly on your bratwurst-in-a-bunIf you like it, you could try making your own
1/2 cup mustard seeds
2 tbsp dry mustard
1/2 cup cold water
1 cup cider vinegar
1 small onion or 1-2 shallots, chopped (about 1/4 cup pressed down)
3 tbsp packed brown sugar
2 cloves garlic, minced
3/4 tsp salt
1/4 tsp dried tarragon
1/4 tsp ground cinnamon
Combine mustard seeds, dry mustard and water in a small bowl. Cover and let stand overnight.
Combine vinegar, onion, brown sugar, garlic, salt, tarragon and cinnamon in a small saucepan. Bring to a boil over high heat; reduce to medium. Boil, uncovered, for about 7 - 10 minutes until reduced by half.
Pour vinegar mix through a fine sieve into a food processor bowl. Rinse saucepan and set aside. Add mustard mix to the vinegar mix; process in food processor about a minute or until mustard seeds are chopped but not pur�ed. Pour into rinsed saucepan. Cook over low heat until mustard is thick, stirring constantly. Store in airtight container in the fridge for up to 1 year.
If it starts to look dry at any time during storage, add a little white wine.Last edited by supersprout; 05-02-2007, 05:35 AM.SSx

I was going to post up Tarragon Grain Mustard, but you've beaten me to it!
For something completely different, Moutarde au cassis, has Creme de Cassis liqueur added, which gives it a rich, fruity flavour and red colour.
Or try adding green peppercorns or chillies, or dill.....

Made some lovely honey mustard by whizzing yellow mustard seeds soaked in vinegar. Now I want to make some more types and economically. Where can I buy cheap yellow mustard seeds and mustard powder in kilogram quantities? (Have seen them online but then get killed by the p&p). Unfortunately Indian cookery uses black mustard seeds only so that is one avenue out.
