  • Yeast question

    I have a recipe caling for 20g fresh yeast. Can any one tell me how much dried instant yeast I would need to substitute instead please?

    I have a bread recipe calling me and no fresh stuff.

    You can use dried yeast instead of baker's yeast. Simply follow the same method, but use only half the weight given for fresh yeast. Leave it longer to rise. Fast-acting yeast may also be used; just follow the instructions on the packet. Note that the dough rises more rapidly with 25g (1oz) yeast than with 20g (¾oz) yeast.

      Hi Jacky. Bread making to me is always trial and error. When it comes to how much yeast I always use the rule of thumb method. The important thing is the amount of rise you get in the initial dough. If there isn't enough activity you just have to wait a while longer for the yeast to grow. Does this help?         Thanks guys, Im having a day when my brain is fuddled! In the end I just used 1tsp of fast acting to 11b flour. In the oven looking good! Its a recipe Ive used before but my brain just wouldnt work! Loked up different sites with various equations and just sat there looking at them with my mind fuddled!!

        Proof is in the tasting though let you know later!!
