    500g mixed fruit (soak overnight in 300ml tea)
    800g white loaf (I use value sliced a bit stale) broken up and soaked overnight in 750ml milk can use skimmed, semi or full or mixture.( Iput in fridge overnight )

    150g prune puree (ready to eat stoned prunes whizzed up with hot water till like double cream consistency)
    225g dark soft brown sugar
    6tsp mixed spice
    3 lge eggs

    Beat eggs then beat in sugar, prune puree and mixed spice.
    Pour onto bread and mash in well (potato masher works quite well)
    Mixed in soaked fruit with its liquid.
    Put in a lined tin (11x14 " )
    Sprinkle some demerar on top
    Bake in preheated oven (180C/Gas 4) for 1 1/2 hrs til golden
    Leave in tin till cool then cut into slices.

    If you don't want to use prune puree you can use the same weight of melted butter, or veg oil but the prunes make it fruitier.

    Binley as I was one of the requesters, you are a total star for posting this recipe - I bet it has family connections and looks a real good-un. Off to buy a value loaf and some prunes tomorrow! Thank you.

      No family connections , just a basic recipe I fiddled with. Although according to my mum my Gran used to make it for my Grandad to take in his snap.

        Just must add that if you make up a large batch of prune puree it keeps in the fridge for a few months.

          Bread Pudding Recipe:

          225g (8oz) Stale Bread
          110g (4oz) Currants, Raisins or Sultanas
          50g (2oz) Brown Sugar
          50g (2oz) Butter
          ½ tsp Mixed Spice
          1 Egg
          Milk
          Demerera sugar (for top)

          Pre-heat oven to 180°C/ 160C fan oven
          Break bread into small pieces; soak in cold water at least 1 hour
          Strain and squeeze out as dry as possible.
          Place into a basin and mash with a fork.
          Add the dried fruit, sugar and mixed spice, mixing well.
          Add the egg and enough milk to enable the mixture to drop easily from a spoon.
          Place into a greased baking tin. Sprinkle top with demerera sugar.
          Bake for about an hour or until slightly firm to the touch.


          My Nan used to make bread pudding to use up stale bread, not buy it specially! I freeze any leftover bread and use it in this recipe when there's enough.

            We never have any stale bread it all gets eaten , plus I make this on too much of a regular basis to guarantee there will be enough stale bread for it.
