500g mixed fruit (soak overnight in 300ml tea)
800g white loaf (I use value sliced a bit stale) broken up and soaked overnight in 750ml milk can use skimmed, semi or full or mixture.( Iput in fridge overnight )
150g prune puree (ready to eat stoned prunes whizzed up with hot water till like double cream consistency)
225g dark soft brown sugar
6tsp mixed spice
3 lge eggs
Beat eggs then beat in sugar, prune puree and mixed spice.
Pour onto bread and mash in well (potato masher works quite well)
Mixed in soaked fruit with its liquid.
Put in a lined tin (11x14 " )
Sprinkle some demerar on top
Bake in preheated oven (180C/Gas 4) for 1 1/2 hrs til golden
Leave in tin till cool then cut into slices.
If you don't want to use prune puree you can use the same weight of melted butter, or veg oil but the prunes make it fruitier.
