  • Salad dressing recipes?

    Got loads of lovely lettuce growing...

    Anyone any favourite salad dressings? Any herby/basil ones?

    It's not a recipe, but personally I've never found a dressing that even comes close to Cardini's Original Caesar salad dressing.

    If I don't have that I tend to mix my own in a jar using any of the following ingredients:
    Olive Oil
    Vinegar (sherry, white wine, cider, balsamic)
    Lemon/Lime Juice
    Ginger
    Garlic
    Soy Sauce
    Herbs
    Dijon Mustard
    Pepper

      my favorite; blue cheese/ roguefort;
      i just do it to tatse, so just as a guideline -2 tblp hellmans, 1 tblp. youghurt, 1 tbsp.tablespoon cider vineger or lemon juice, ground pepper, and as much crumbled cheese as you like; scrape it off the wedge with a fork. let it rest overnight befor eusing it.

        I tend to stick with -
        oilive oil
        lemon juice
        dry mustard powder
        bit of balsamic
        any herb I fancy

          I made this one the other day to go with tomatoes, avacado and mozzarella

          large handful Basil leaves
          3 tbsp extra virgin olive oil
          1 tbsp red wine vinegar
          salt and pepper
          pinch sugar

          it was really great and simple... wizzed it up in a mini processor. Add the salt, pepper and sugar after you have wizzed it

            My base is usually:
            one third acid (usually the vinegar from pickled onions)
            two thirds oil (sunflower & olive together)
            dollop of Dijon
            splash of chilli sauce

            Then add salt, pepper, soy sauce or whatever.

            I keep it in one of these and just top up as necessary. It goes on stir fries, salads, meat, jacket spuds, everything.

              I rarely use any other salad dressing than balsamic vinegar, unless I can get hold of the raspberry version, which I believe is made simply by steeping raspberries in balsamic vinegar for a while and then straining off (but I just buy it when I can).
              Sorry, but that is so delicious that I can't be bothered with anything else!
              Flowers come in too many colours to see the world in black-and-white.

                Our fav in summer is walnut oil with lime juice, no other seasoning. If it's for a tomato salad then just use the oil as the toms can be acidic. And we smother the tom salad in basil, chives or chopped shallots anyway so doesn't need anything else. I'm into greek basil this year as it doesn't need chopping just pull leaves off it like thyme.

                I find some dressings too heavy for leaves and mustard can kill the taste for me. Delia does a good caesar salad dressing if you can be bothered. I use Sainsbury's fresh one.

                Make my own mayo with either groundnut or rapeseed oil and a couple of teaspoons of olive oil at the end for flavour. Just mix it up in a bowl with electric hand whisk. Lasts for a couple of weeks and add things like curry paste, lemon and tabasco or capers, chopped gherknis and parsley for a sort of tartare sauce with fish.
