I have a double batch of jelly in the pot ready to cook, a large tub in the fridge (probably about 700g or more) to find a use for, and another batch still on the bushes (probably about another 2kg in total). I have used some for fruit tartlets, but what can I do with the rest?
I didn't intend overdosing on redcurrant bushes, but they came in a 3 pack with a gooseberry and blackcurrant from Lidl a couple of years ago, so we planted the 3 that we bought. The gooseberries have a few this year, for the first year, and I may get a small batch of blackcurrant jam (this was my real fav), but the redcurrants just seem to have loved the bed they're in and thrived!!
And the only recipes I can find in my myriad of cookbooks are either jelly or strawberry and redcurrant jam (and I don't have anywhere near enough strawbs for that!).
Any ideas gratefully accepted!
