  • Ideas for redcurrants?

    I have a double batch of jelly in the pot ready to cook, a large tub in the fridge (probably about 700g or more) to find a use for, and another batch still on the bushes (probably about another 2kg in total). I have used some for fruit tartlets, but what can I do with the rest?

    I didn't intend overdosing on redcurrant bushes, but they came in a 3 pack with a gooseberry and blackcurrant from Lidl a couple of years ago, so we planted the 3 that we bought. The gooseberries have a few this year, for the first year, and I may get a small batch of blackcurrant jam (this was my real fav), but the redcurrants just seem to have loved the bed they're in and thrived!!

    And the only recipes I can find in my myriad of cookbooks are either jelly or strawberry and redcurrant jam (and I don't have anywhere near enough strawbs for that!).

    Any ideas gratefully accepted!

    I made raspberry and redcurrant jelly last year. Redcurrants freeze well too so you can save some to use fresh during the year. Good served with icecream, or rice pudding etc. Found this link for you 35 red currant recipe/s

      I love redcurrant jelly used as jam, so large quantities wouldn't bother me in the slightest.....
      Flowers come in too many colours to see the world in black-and-white.

        redcurrant wine is gorgeous and easy

        will post recipe if you're into that sort of thing - I freeze mine and make batches throughout the year
