  • Creamy Vanilla Fudge

    Recipe from the 'Favourite Sweets and Toffee Recipe' book

    1lb granulated sugar
    2oz butter
    1/4 pt evaporated milk
    1/4 pt fresh milk
    A few drops of Vanilla extract

    Put all ingredients, except the vanilla extract, into a large heavy bottomed pan (like a maslin pan), and heat gently until the sugar has dissolved. Bring to the boil and boil steadily, stirring from time to time, until 'soft ball' stage is reached (drop a blob into cold water and roll between finger and thumb, or use a sugar thermometer). Remove pan from heat and put on a cool surface. Stir in the vanilla extract and beat the mixture until it is thick and starts to 'grain' but is still pourable. Pour straight into a buttered tin and leave to go cold and cut into squares.

    Fudge-tastic!

      i am going to copy and file that recipe- it sounds yummy. just one question- why did you post it today, when i only started my diet yesterday!!!!!

          Really Lazy Fudge
          1 tin Nestles Condensed Milk 'Caramel'
          a few drops of vanilla essence (or you can make other flavours)
          loads of icing sugar
          Warm the condensed milk in a bowl over hot water, stir in the vanilla (or whatever other flavour you like)
          Add sieved icing sugar and stir in thoroughly, while keeping the mix warmed.
          Keep adding icing sugar until the mix is really difficult to stir.
          Pour into a greaseproof-lined shallow tray and leave to cool.
          Mark into squares as soon as it is nearly cold (before it finishes setting).

            Well, a quick update...

            This fudge recipe won me 1st prize this afternoon at the Garden Society Summer Show, so you can make it with confidence
