  • Rhubarb & Vanilla Jam

    Rhubarb and Vanilla Jam
    1. Freshly picked rhubarb: 450g/1lbs washed and cut into 12mm-½inch pieces.
    2. Granny Smith apples: 450g/1lbs washed, cored, peeled and cut into very small pieces.
    3. Juice from one lemon.
    4. Sugar: .800g/2lbs.
    5. Water: 300mls
    6. Vanilla Pod: sliced lengthways.


    Place Rhubarb and apple ingredients and water in pan, Simmer for a few minutes to soften the fruit. Add the sugar, stirring until dissolved then add the the sliced vanilla pod.

    This jam is not boiled as it will burn, Cook slowly, allowing to gently simmer for approx 45 minutes. Pot, cover and label.

            Thought I would bump this - Prize Winning Jam again this year. Plus I won the Best Preserve Exhibit as well - a rosette and actual trophy!

                    Could you use different apples? (eg bramleys) Do you remove the vanilla pod once cooked or leave it in?

                      I've used both Bramleys and Granny Smiths in this (dependent on what I've got) - as long as it's a fairly 'sharp' apple, it seems to work...

                      Take the pod out when you start to put the jam in jars... you'll have to bin it - I tried to clean one and dry it back again once, but it didn't work!

                            Made this thanks OWG. Its cooling in the kitchen at the moment...the only downside I found was that its quite frothy....but very tasty!!
