Take the pod out when you start to put the jam in jars... you'll have to bin it - I tried to clean one and dry it back again once, but it didn't work!
If you rinse and dry(ish) the vanilla pod you can store it in a jar of castor sugar. Added bonus is that you get a lovely jar of vanilla-flavoured sugar.
I also have a jar of castor sugar containing a cinnamon stick or two.

Ah, you see, this is why I started making this jam - I'm not a fan of ginger; and all the rhubarb recipes included ginger....so I used vanilla instead....

I do this as Christmas hamper gift - get a nice big coffee jar (eg Douwe Egberts with the push in lid) and fill with caster sugar and a vanilla pod - do it at least a month before Christmas - vanilla sugar! Fab for baking etc.
one change to the recipe, chopping up small was such a faff last time [ I didn't do it finely enough so ended up with gert big lumps of apple I had to squish], so this time, I grated it.
