  • white rice with kidney beans.....

so i made some white rice with kidney beans.. this time around i didn't add any mushrooms..

I usually buy fresh tomatoes but the shop didn't have any juicy ones they were small and hard so i opted for the tinned tomatoes

    1) medium sized onion
    2) some garlicc loves
    3) *poodeena ( mint)
    4) *dhaniyaa (coriander) both from the garden
    5) 1 can of red kidney beans
    6) two cups of tilda basmati rice

chopped the onion up and do the same with the garlic cloves

put some ghee in the haandi (pot) and when its melted throw the chopped up onions and garlic inside on low to medium heat

when the tomatoes have turned into liquid add the chiili powder and salt

make sure you dont over do it with the salt.. you can always add salt to the dish when its finished if you think its not enough.. with the chilli powder make sure you add just a tablespoon if you dont like it too spicy... if you add too much the food will be spoilt

the canned kidney beans are in brine so wash the brine out by simply putting the beans in a sieve and running it under the tap

after 20 mins the kidney beans will be done, you can taste a kidney bean to make sure they have been done

add the mint leave and coriander leaves

            now to make the rice

i left 3 cups of rice in water for 1 hour, they swell up and this way need less time boiling in the water

when the pot is simmering add the rice into it

            leave it to simmer

take some rice out using a small teaspoon and taste to see if they have been done.. mine are ready..

pour the contents of the pot into the sieve in the kitchen sink so the excess water drains out and place clean kitchen cloth over it for about 10 mins making sure all the water is out

now to eat it,, left some coriander leaves at the end so i can garnish it make it look pretty..

you can chop us some raw chilis to garnish it and also a squirt of lemon juice on the kidney beans will make it taste nicer..

you can dice up some chicken strips and fry them and add them to the rice if you wanna....
