  • Any Ideas what I can do with a load of lemon Curd?

    Hi all
    I bought some cheap sainsburys lemon curd, following advice somewhere on here about buying cheap jam and saving the jars....anyway I would love to know if there's any recipes I could use a load of lemon curd...my daughter loves it??

    My MIL makes a sticky lemon cake with it. No idea of the 'secret' recipe- but it's worth making!!!!

    Tis a bit like this- with the curd folded into the mix before baking...but hers is more gooey- she prob justs adds more curd!!!
    Freezes excetionally well!

      Thanks Nicos...looks good (and I can probably adapt it!) and knowing it freezes well helps a lot

        why not make a lemon curd pavlova and if the lemon curd is a bit bland put some more lemon juice in it.

              Found this.....
              Lemon Curd Yogurt Cake

              Ingredients: 4fl oz lemon curd yogurt, 10 oz selfraising flour, 1 teasp. baking powder, 2.5 fl oz corn oil, 6oz golden caster sugar, 2 eggs, lemon curd for filling.

              Preheat oven to 180 C /gas 4. Place all ingredients in mixing bowl and beat for few minutes until well mixed to smooth batter. Grease tin and pour in batter.

              Cook in center of oven for about 40 mins until well risen, golden and firm. Turn out onto wire rack to cool. When cool split and fill with lemon curd, dredge with icing sugar.Eat within a day or so.

              This cake can be made with any flavour yogurt - eg orange, raspberry and the filling changed accordingly. It can also be made in a hollow ring tin, the centre filled with fresh fruit and served as a dessert with creme fraiche or cream.

                ..found this site, didn't check all the recipes tho' as to whether they actually used lemon curd in them. But it may be worth a look

                  Lemon Meringue Cheesecake.

                  Meringue Nests dolloped with a mix of Philadelphia Cheese spread, Lemon curd and a squizz of lemon juice. If you wanna make it look posh grate some zest into the mixture and some sprinkled on top and dust with icing sugar.

                  Blob a bit of the mix on the plate under the meringue to stop it from sliding.

                  They made a packet in our Pub!

                    Lemon Meringue Ice Cream Cake was always my daughter's favourite birthday cake!

                    Cover base of tin with madeira sponge cake (or lemon sponge cake). Put spoonfuls of whipped cream, crushed meringue nests and spoonfuls of lemon curd on top - gently swirl them together so it looks marbelled, then freeze overnight. Take out of freezer a bit before you need it.

                    I used to make it with homemade ice cream instead of the cream too, but still use the crushed meringue nests and lemon curd all swirled together on top of the cake base. Looks impressive but really easy - my favourite sort of recipe
                    Life is too short for drama & petty things!
                    So laugh insanely, love truly and forgive quickly!

                      Sounds ideal, I wont be able to stop buying cheap lemon curd now!!

                      I can adapt most of those for us (my daughter is cows milk intollerant).

                              You could also make lemon curd tarts, similar to small jam tarts. Roll out some short crust pastry, cut into rounds and place into muffin tins. Add a few spoonfuls of lemon curd into each tart, and then bake in the over for about 20 mins. Remember to let them cool properly before eating
