Freezing cakes ..

I do a large cake batch bake using loaf tins. Usually three flavours of cake. I slice them all up then put them back in the tins but I mix them up so that when I defrost a loaf tin we have three different flavours to eat. It's usually a ginger one, a double (or triple!!) choc chip and either a date or fruit cake. It makes about 9 good sized slices. When we go camping I just remove the loaf tin from the freezer and it acts as a cold pack for the journey but we have cake for the time we are away. As already said, it's easy enough to defrost a couple of slices if you fancy a cake and don't want to bother baking, or unexpected guest arrive.

I made some strawberry muffins for the first time the other day and froze most of them.
Just taken one out and left to stand for about 30 mins and it tasted better than when it had just been baked.
I think the stawberry yogurt I added to it helped keep it really moist.

Never in the history of my household has a cake of any description ever survived long enough to even be considered for freezing!!!!!

The only way is to make three or four at a time .I made a batch of apple cakes and they're now in the freezer.....S*d the housework I have a lottie to dig
