  • Apple butter..

    I have spent a bit of time making apple butter..........Seemed like a good way of using up my excess of apples. Just tasted it and it's not quite my cup of tea. Any ideas as to what I can turn it into . ?

    Firstly, what IS apple butter?

      Sort of like apple sauce with added sugar, cinnamon, cloves and allspice. I've just found some cake recipes that you can use it in

        Basically apple butter is like apple jelly with the pulp in, but you can add flavour things if you want. If you use less sugar and boil it longer you get apple cheese, which sets in a mould and can be turned out. The equivalent made with quince is starting to appear in some shops, but we've been buying it in Spain for ages, makes a good accompaniment to the Spanish-type cheeses.
        I would think the spiced apple butter might be good with strong cheese, or cold-roast meat.
        Flowers come in too many colours to see the world in black-and-white.

          Never had apple butter but have made some apple cheese this year (I know this doesn't really help) which I'm hoping will be nice.

          Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

          Which one are you and is it how you want to be?

            Could you use it as a cake filling? Plain sponge type with the apple butter spread in the middle?

              I hope I dont sound thick, but could you put the recipe up anyway? Its just there are so many versions of apple sauce etc...pretty please???
              I am getting loads of windfall apples from my neighbour.
              Apple cheese.....is it the same recipe as quince cheese, but obviously with apples instead??

                  Probably, never made it before but my recipe book (Margaritte Patten one) had recipes for various fruits and it sounded interesting and worth a try. My main worry is how on earth I'll manage to get it out the moulds in one piece!

                    Here ya Go.............

                    Put 4lb apples washed and cut into quarters(core and seeds and all) in a large pan with 16fl oz cider. Bring to the boil and simmer till soft. Puree through a fine sieve then measure amount. For every 8fl oz of puree add 4oz sugar. Then add 2 tsp cinnamon, 1/2 tsp allspice and 1 tsp ground cloves.Add rind and juice of one lemon . Slowly cook stirring till sugar has dissolved then quickly bring to the boil and boil till when you drop a bit on a cold saucer it sort of stays in one place I don't think it sets as much as jam.. Pot into warm sterilised jars and cover.

                    I've found a nice cake recipe that uses it but I haven't road tested that yet.....

                        Just altered recipe.......2 tsp cinnamon and the rind and juice of one lemon ........

                          I made some apple butter inthe slow cooker. Its good stirred into porridge! Have just made a bitter apple preserve recipe, which is sweet but with a tartness too it. I too have an apple glut!

                            Am desperately trying to use up the remaining apples before they go over .....freezers already stuffed with them stewed, crumbled and caked ......

                              I thought you could keep apple butter in jars like jam, Binley. That's what my mother used to do before she had a freezer. We didn't like the stuff either.
