      Put 4lb apples washed and cut into quarters(core and seeds and all) in a large pan with 16fl oz cider. Bring to the boil and simmer till soft. Puree through a fine sieve then measure amount. For every 8fl oz of puree add 4oz sugar. Then add 2 tsp cinnamon, 1/2 tsp allspice and 1 tsp ground cloves.Add rind and juice of one lemon . Slowly cook stirring till sugar has dissolved then quickly bring to the boil and boil till when you drop a bit on a cold saucer it sort of stays in one place I don't think it sets as much as jam.. Pot into warm sterilised jars and cover.

      I've found a nice cake recipe that uses it but I haven't road tested that yet.....

        They might do. I found the recipe a bit too sweet for me , but crab apples are tarter .

          According to one of my preserve books, crab apples are meant to be very good for butters

          Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

          Which one are you and is it how you want to be?

              I wonder if the type of cider (sweet,dry,lumpy scrumpy or even pear) would have an effect on the taste of the finished product now where is the drunken smiley ?

                ...oh- and I've been invited by an American friend to make apple butter jam next week- so it'll be interesting to see how she makes it!

                        Used this recipe today
                        Streusel Topped Apple Butter Cake Recipe

                        It is very nice even tho' I was rushing and forgot to put the sugar in the batter mix. I think the apple butter was sweet enough not to need it.
