I made this a couple of weeks ago with some dontated apples. Its from HFW Everyday cookbook. It was very very nice and easy to make and thought you may like it if you have an apple surplus.
- 750g Bramley Apples (or other collapsing cooking apple) peeled, cored and sliced thinly
- 125g caster sugar
- icing sugar to taste
- 125g whole milk plain yoghurt
- optional 2-3 tablespoons dbl cream
Put the apples in a pam with the caster sugar and 3 tablespoons of water. Heat until the sugar has dissolved then simmer for 30 mins stirring until the apples are very soft and broken down. Blend until smooth and leave to cool.
Taste for sugar (it should taste over sweet) but add icing sugar for extra sweetness.
Mix in the yoghurt and dbl cream and churn in an ice cream maker. If you don't have one freeze in a shallow container and beat as it hardens to knock out the ice crystals.
I also blended some blackberries, sieved it and mixed it in just before freezing, so it was a ripple effect.
