  • Gajar Halwa (Carrot Pudding)

In the reduced section at ASDA today, I thought I'd give a carrot and nut desert a try, as they were reduced to 10p.

It turned out to be absolutely lovely, needing only to be heated up for 1 minute in the microwave. So yummy that I then went straight online to look up recipes, as it's a great way to use carrots. Seems like a healthy pud, lots of fibre to balance out all the sugar!

Many of you may already know Gajar Halwa is a Indian sweet carrot pudding, but I never heard of it or tasted it before. I'm not adding a recipe here, as I've not actually made it myself, so it's a case of selecting a recipe that you fancy.

If you want to try a ready made pud like I did, before you make your own and then have an idea of what the end product should look and taste like, then try: The make "Mumtaz" Gajar Halwa - "a delicious carrot dessert made with pistachios, almonds and cardamom. I think the usual price was £1.28 in Asda, but difficult to tell as it had so many reduced stickers on it.

Lots of the recipes used Ghee, but one recipe and demo on YouTube, just used unsalted butter.

This is a dessert for folk who have a sweet tooth, which I have. I like sweetness but nothing heavy, so cakes, muffins and pastries are not my thing. But sweetness and butter with the lightness of carrots and nuts puts puds back on the menu for me.
