I have made some pear jelly sweets and its not setting. Any ideas why?
Just a quick recap of what I done. I boiled the pears, drained the liquid then pureed the fruit. Mixed in equal sugar to the weight of the puree and boiled within an inch of its life. Put in non stick pan to set.
