    Do I just spread them on a tray in a hot oven for 20mins (guessing here) ?

    I dont know but I thought it would be a low oven.

      you can boil them for 10mins first apparantly too - makes them easier to shell (though, I read that you dont have to bother).

        I made a spiced pumpkin teabread, pumpkin soup , cajun spiced roasted pumpkin seeds(thanksfor the link Chris), some drying to save and the shell for next doors kids to carve. Not bad for one 5lb pumpkin

            Give 'em a good wash first to get rid of all the goo. Dry on paper towel. I don't bother to take off the outer shell, but then I've got good teeth. Spread onto baking sheet, squirt with a bit of Fryspray and shake over some salt and chilli powder. Bake at about 200 degrees for about five minutes, but keep your eye on them, and turn them halfway through. Yum!!

              I gave them a good sprinkle with cajun spice mix....I quite like them but OH is unsure.

                In todays paper ( daily telegraph )

                2tbsp pumpkin seeds
                1 tbsp extra virgin olive oil
                Good pinch of flaky salt
                1/2 tsp cayenne pepper

                Preheat oven to170c /325F gas mark 3
                Put the pumpkin seeds in a roasting tin add a drizzle of olive oil, a splash of water, a pinch of flaky salt and the cayenne pepper
                Toss together and roast for 5 -10 minutes,. As the water evaporates it crunches up the seeds and leaves them coated in oil, cayenne and salt
