4 oz marge
8 oz demerara sugar
10 oz golden syrup
8 oz plain wholemeal flour (but works fine with white)
2 level tsps baking powder
3 level tsps ground ginger
8 oz medium oatmeal
1 large egg
7 fl oz milk
Gas 2 or 140C for an hour or until skewer comes out clean
Melt marge, sugar and syrup in pan over gentle heat
Oil a deep roasting tin
Mix flour, baking powder, ginger and oatmeal in large bowl and pour warm syrup mix on top.
Add milk and beaten egg and mix well.
Pour into tin and bake in oven at Gas 2 or 140C
Cut into squares when cold and store in tightly lidded box.
