Spiced Bacon & Pumpkin Soup
Ingredients
1 tbls olive oil
7 oz onions, sliced
3 lb pumpkin, peeled, deseeded and cut into chunks
4½ oz smoked back bacon, diced
1 tbls ground cumin
1 pint 7 fl oz veg stock
Salt and black pepper
To serve: crusty bread rolls, optional
Method
1. Heat the oil in a saucepan and add the onions. Stir, then cover and cook over a low heat for 5-10 minutes until they soften, stirring occasionally.
2. Add the pumpkin, bacon and cumin to pan. Stir, then cover and simmer for 10 minutes, stirring occasionally.
3. Add the stock, turn heat up and bring to the boil, turn down and simmer, uncovered, for 20 minutes, or till pumpkin is tender.
4. Purée the soup with a hand-held mixer or in a food processor. Season to taste, serve accompanied by a crusty bread roll, if you like.
It's very yummy and warming for this time of year.
