btw, I usually use Tesco flour and Allinsons yeast, but Allinsons 3kg white flour is on offer at the mo, and Tesco also has 3 for 2 on baking productsAll gardeners know better than other gardeners." -- Chinese Proverb.

Yep - I like Dove Farm Organic. If not, Tesco's organic is nice for bread, but I've had some poor results with baking other stuff (yeah yeah poor workman blaming her tools, but 'tis true... it makes rubbish choux pastry )I don't roll on Shabbos

I use the cheapest flour [only get it on offer or the cheapest they have] and we get lovely bread. I use the recipe for J***E Oliver's pizza dough to be the bestest bread recipe around after trying lots of different ones; so use that all the time these days. Actually, I halve it each time.

Well, I've had my breadmaker for nearly three weeks now and have tried several different flours but the one I'm sticking with is Doves Farm Organic Malthouse. I LOVE it! One of the first bags of flour I bought was Hovis Granary flour ... Ever looked at the ingredient list?! :0
I'm getting better at cutting the stuff too. The first few loaves I sliced were like door stops at one end of the slice and petered away to nothing. There is definitely a knack, and I think I'm getting it, happy days! Tried my dad's electric carving knife to slice the bread, what a waste of time though, the crumbs went EVERYWHERE and it was no easier than doing it by hand.Last edited by Croila; 15-11-2010, 08:57 AM.

thank you all. will probably start with the tesco one then and see how i go, as i will probably take a few attempts to get it right. also, i thought last night, there is an independant flour mill a few villages away, it might be worth getting a big sack from them later on- has anyone went that route, rather than a supermarket/ shop bought brand? the name of the flour mill is matthews. i am really looking forward to the smell of fresh baked bread!

So I'm very wary of keeping flour for too long now!

[edit] - I see lindyloo beat me to it with that idea.Last edited by StephenH; 15-11-2010, 10:05 AM.

croila- yuk! that must have been alwful. but thanks for the warning- it's definately worth considering how much i would use.
i have used the local mill in the past, to buy grass seed, which they also sell- they asked lots of questions about the land, and made up a mix especially to suit the individual requirements. no windmill though! just a brick building by the side of a railway line.
