I think my marshmallows have gone wrong They are very soft, but hold their structure ish and quite sticky. I have read that they are very different to shop bought but is this right??

Which recipe did you use? I have tried James Martins (I think it was anyway) and whilst they were *much* softer than shop bought ones, they werent too sticky when coated in the icing sugar/cornflour mix.
Failing that - perhaps the egg whites werent mixed enough/too much, or the sugar syrup wasnt at the right temp.
Have another go - they're fab

it was a recipe from favourite sweets and toffee recipes. The only thing I can think is that the egg whites werent mixed enough. It said the syrup had to be at 116 c and I checked it on the sugar thermometer. hmmmm, I wont give up thoughhttp://www.caringbridge.org/visit/jamiesjourney

Another possibility might be that you didnt leave everything mixing for long enough? I seem to remember that 10-20mins of mixing once the syrup had been added is required. Here's a link to James Martins recipe....

Jax, does your recipe use the marshmallow plant? I ask because I ordered some marshmallow seeds for my tortoise to eat (he loves the flowers!) and the description said that the pack included a recipe to make my own marshmallows. I thought I'd try myself as I love anything with marshmallow in it.

it was easy to follow and i'd recommend this recipe!
it was a good way to use up extra blackberrys, but it made it not last long. you can always leave out the blackberrys and just have plain marshmallows.http://pot-to-plot.blogspot.com/ My brand spanking new plot
