I've just started making focaccia, and my dough has just been put away to rise.
However, a quick trip to the pub may be on the cards. What shall I do with the dough? Should I wait until it has had its first rise (which is approx how long in a warm cupboard?), then knock it back and put it in the fridge until I want it? Do I get it now and put it straight in the fridge? Any other ideas?
