I don't quarter the oranges, I just peel them and cut the peel into slices - that way you can use the oranges whole for something else. I didn't bother with the food colouring but I can think of a few peeps who might like to make them using funky colours!
Once the peel has been candied I dry them in either a dehydrator or in the oven - make sure you don't over cook them. Then just dip them in melted chocolate and leave on a sheet of greaseproof paper for a little while for the chocolate to harden.
It looks a bit long winded but it isn't and once you've done it once, it is very easy.
