  • How do you do yours ?

    Ok then after a recent thread.....Here's how I do mine......

    Peel and cut up spuds,
    Put in a pan of cold water , bring to the boil and simmer for 5 mins.
    Meanwhile have pan with some veg oil in the oven getting nice and hot.
    Drain the spuds and while still steaming sprinkle in some rosemary and give a good shake (with pan lid on )
    Tip into hot fat and sprinkle with a little bit of sea salt.
    About 45 mins in hot oven .........

    So.......how do you do yours ?

    I par boil spuds then let OH do the rest! Not from laziness, just she becomes very possesive of HER oven...........can't imagine why?

      Hot oil [sunflower or olive] in pan

      Parboil potatoes, drain off water into another pan for the veg

      Shake the spuds, add some flour and salt and pepper and shake.

      Put spuds in pan, has to be hot enough to crackle the oil

      Yummy - we'll be having some later today as usual on a Sunday

        I do the same, although I par cook them in the microwave whilst the fat is heating up.

          Par boil for 10 min allow to drain & steam for 5 min so really dry, put back in pan with a tbsp of fine semolina give it a good shake.
          Meanwhile heat goose fat/ lard until practically smoking, when potatoes are ready pour in put in gas 8 for 20 min baste & cook for another 20-25min at gas 6
          Perfectly crispy yet fluffy everytime, yum yum. Just making mine for the family early xmas, if anyone can gethere damm snow *shakes fist*

            Sometimes do Delia's version (similar to those mentioned; par-boil, drain, shake, put into really hot fat/oil, then back in hot oven), sometimes just put in the roasting tin and coat with fat/oil, depends how hot the oven is for roasting whatever goes with.
            Flowers come in too many colours to see the world in black-and-white.
