Hi does anyone make their own pork mincemeat for saysage rolls. Just had a look at it in the supermarket and it didn't look anything special. Is it hard to make and if so how

You need a mincer with a 'fine' disc, and some meat with a decent amount of fat in it. (If it doesn't have fat, you end up with a very dry result.) And also some rusk or breadcrumbs is handy too (to help retain some moisture in the meat). Just pass it all through the mincer many times til it's combined and and of the texture you want.
