Here's a great way of using up odd bits of mincemeat and marzipan (or even christmas pudding) etc., and its really quick to do:
Ingredients:
(To make 6 -ish)
125g self raising flour
50g caster sugar.
pinch salt
1 med egg beaten together with
glug of sunflower oil (or 25g of melted butter if you want to)
plain yoghurt about 75ml (or a splash more if mix seems dry) If you dont have yoghurt, milk will do.
Mixed spice teaspoonful
any spare dried fruit about 50g
6 spoonfuls mincemeat
marzipan
Method:
mix dry ingredients together in a bowl, make a well in centre and add, yoghurt, egg and oil.
Mix quite loosely but dont overmix
add spoonfuls mincemeat and mix together leaving clumps.
Spoon into prepared muffin cases in tray.
Break off marble sized peice of marzipan and roll in your hand to make a ball, push one into each muffin centre.
Place in oven gas mark 4 for about half an hour, or until muffins well risen and browned.
Eaten hot the marzipan is slightly gooey - yummy!!
