  • Turkey Leftover Recipe Ideas....

Right, this is the time of year there seems to be an abundance of leftover poultry meat....

So, what are you doing with yours?

    I'll start...

Tonight, we're having a turkey, bacon and mushroom risotto (usually made with chicken)

I'm also planning a Turkey and Leek pie for when we have visitors (Jamie Oliver recipe): Turkey-and-sweet-leek-pie

I fancied the leek & turkey pie as well especially the crushed chestnuts in the pastry but forgot to buy the puff pastry & couldn't face the supermarket today so will go tomorrow.
    Anyone tried it?

Once the meat is starting to get a bit dry for butties, I chop it all up and put it in the slow cooker along with any leftover veg, gravy, stuffing etc all cut into similar size bits. Let it heat through until boiling and serve in a giant yorkshire pudding. We call it Christmas casserole.

What an excellent idea, as I love Yorkshire pudding.

Simple turkey salad today with potato salad made out of the spare PFAs from Christmas Day. Will be having loads of butties, risotto, soup, pie etc over the next week as still loads left - love left over turkey, could eat it till the end of Jan if it didn't run out / go off before then.

Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

Which one are you and is it how you want to be?
