  • Anyone got a fave banana bread recipe to share?

    have a pile of ready to go off bananas and rather than feed them to the pigs, i thought i might make some banana bread for the kids lunchboxes tomorrow.

    cant find the one i usually use so thought i'd ask on here if anyone has one they'd like to share please?

      This is my usual one (I'm actually planning on making it this weekend). The recipe calls for nuts, but you can leave them out.

      Also, you might already know this, but if not, if you have bananas that are past their prime you can put them in the freezer. They'll keep in there happily until you're ready to bake with them, make smoothies, etc.

          no i didnt know that - so thank you very much.

          also like the look of this recipe so will pop the remainder in the freezer and mak it at the weekend - kids love banana anything!

            It's very simple recipe,I made this banana loaf a couple of times when OH "forgot" to eat them.It's not too heavy or sweet,nice moist sumfink to bite
            Gan heather,your one looks a bit more posh
            I didn't know about frezing bananas,thanks for the tip(the last lot went to the compost bin)
            I suppose you freeze them skinless?Sorry,I've never done it before...

                I know the skin on banana changes the colour when it's too cold(that's why they aren't stored in the fridge).I thought you'd have to peel them off,slice them,whack into a bag or container and then freeze them.Correct me if i"m wrong please

                  I don't bother peeling, just put the whole thing in a ziplock bag in the freezer. When they come out they're mushy, so the peels come right off. You wouldn't want to eat the bananas plain as a snack after they've come out of the freezer - so mushy (unless you like that). But for cooking, it doesn't make a difference.

                    Most of the recipes from joyofbaking are a bit "posh." BUT, they're all tried and tested and I've never been disappointed with anything I've made from there (and I've made a lot of things...). I also like how there are photos of all the desserts and the way they're organized.

                        Very similar to the one I make. I also add either chocolate chips, raisins, or finely grated lemon/orange zest to ring the changes and zing it up a bit. My son LOVES the choc chip version! I ping individual slices in the microwave to get that fresh out of the oven warmth too, and the choc chips go all melty ...... mmmmmmm.

                        Oh and it also freezes well. I often make two or three at a time, keep one out to eat fresh and freeze the others.

                            Milk shake.

                            You need 1 Banana, Fresh full cream milk & Cornish ice cream.

                            Quantities to taste put into a liquidiser.

                              Sorry I'm a bit late, but the following is really nice. You may need to cover the top of the loaf with tinfoil if it starts to get a bit too dark.

                              JAMAICAN TEABREAD

                              4 oz butter or margarine
                              8 oz soft brown sugar
                              2 tbsp water
                              12 oz self-raising flour
                              2 teaspoons ground ginger
                              2 eggs beaten
                              2 ripe bananas, sliced
                              1 oz granulated sugar

                              Melt fat in a saucepan; add sugar and water, stirring until sugar dissolves. Allow to cool.

                              Place flour and ginger in a bowl and add melted mixture to the flour. Add beaten eggs and combine ingredients thoroughly. Fold in sliced bananas. Turn mixture into a large (2lb) greased and floured loaf tin. Smooth top and sprinkle with granulated sugar.

                              Bake at 375oF, 190oC for one hour. Leave to cool. Serve sliced with butter. (Makes 15 – 20 slices)
