Just been given a large quantity of cream, 3 litres of whipping and 6 litres of double. All in date until Tuesday except 2 litres of whipping, which I will make into Baileys Ice Cream in the morning, not sure what to make with the rest so ideas and recipes would be welcome please

Maybe a bit obvious- but ice cream???
We made a wondeful one a few years back with smashed up mince pies..t'was delish- esp during the summer months whilst sitting in the garden!
well- that would use up a couple of litres
Actually- if you have an ice cream maker you could make different types by chucking in different fruits???

hrmmm...clafoutis or bread and butter pudding will freeze too.
It seems that you can freeze it for up to 3 months, but it'll need whisking afterwards the thicken it again cos it teds to go grainy.
Don' know if you can still buy them , but my mom used to buy packets of frozen cream...sort of in ice-cube chunks...so it's clearly freezable!!!"Nicos, Queen of Gooooogle" and... GYO's own Miss Marple

You could make butter out of some of it? (or is that with single cream?)
I often cook some paste, salmon steaks (cut into small pieces) with garlic, and then once the pasta is cooked I drain off, and either add to the salmon, or directly in the pasta - add salmon in, and either serve - or put in an oven proof bowl and grate some decent cheese on top and put in the oven for 5/10 mins... just have to watch the cream doesn't evaporate!

So far I have made a large Rice Pudding, mainly cream and a little milk, very rich. A litre of Baileys Ice Cream and have a litre of Vanilla Ice Cream ready to put into the ice cream maker later today.
Think I will have a go at making Butter next, fingers crossed never made it before.
Any other suggestions anyone please?

Gratin Dauphinoise???
I just butter a dish and press in a bit of crushed garlic.
Then slice waxy spuds and layer with a tad of salt and a bit more garlic, and the smother with cream
It can be covered and put in a low oven- or even quicker is to microwave it ( little and often til soft).

Butter making is going well on my second lot now, I plan to freeze some as it will keep for a few months in the freezer. I case anyone is interested getting 1lb of butter from 1 litre of cream.
Still loads left, Im thinking chocolate truffles or fudge tomorrow, again never made either of these before.

I made fudge over Christmas using HFW's recipe from the Everyday cookbook (sorry, I can't find the recipe online). It was delicious though, would definitely recommend it.
