I make this all the time, but leave out the condensed milk, cream, coffee and vanilla essence. Yer can add a few drops of water if you've a mind to, but its not the same.. Cheers....

agreed arpoet- the water would take the shine off

maybe stretch to 1 block of ice
May the road rise to meet you,
May the wind be always at your back,
May the sun shine warm upon your face,
The rains fall soft upon your fields and,
Until we meet again, May God hold you in the palm of His hand
      .

I make my own Baileys every Christmas, will find out my recipe and post it on here for you. Main difference is I use a 50/50 mix of Whiskey and Brandy and mine has eggs in it.

I've used a recipe similar to this. The downside is that becasue you use fresh cream it needs using up quickly. (Did I say downside?)

I cheat. Someone gave me a bottle of Tia Maria, which is OK but I much prefer Kahlua. On the other hand, Tia Maria makes a great Bailey's imitation when mixed with equal measure of cream (or even evaporated milk), in fact I prefer the mix to 'real' Bailey's (which I believe doesn't actually contain coffee, or cream....)

Now that is strange, Hilary. Years ago, when I worked in a Pub, a group of us did 'the taste test' with a glass each of Tia Maria and Kahlua - none of us could tell the difference!

My late nan used to make her own Baileys every year - she always used Camp coffee. Though I'm sure manly coffee works just as well...

It could be that the Tia in my cupboard was getting a bit 'old' (opened several months and then forgotten, because I was drinking other stuff) whereas the Kahlua was newly opened, and having once decided the Kahlua was better, I've stuck with it?

Hmmm I don't have a recipe but I did know an Irish woman who used to make her own Bailey's. She said that if it was kept a little while in the fridge you had to strain it thru a sieve to get the thicker bits out of it.......but the downside of that was by the time you finished eating those bits out of the sieve with a spoon, you were too drunk to pour the rest into glasses for the guests.
