  • Carrot, Ginger and Orange Cake Recipe?

    Has anyone got a tried and tested carrot, ginger and orange cake please?

    A very good friend has a birthday approaching and has said its their favourite and not had one for years.

    To be honest Zena you could adapt my carrot cake recipe, just add the zest of a whole orange & half the oranges juice to the recipe below.

    Carrot Cake Recipe


    Ingredients

    4 Eggs
    1 cup Oil
    2 cups Flour
    2 cups Sugar
    2 teaspoons Ginger
    2 teaspoons Cinnamon
    2 teaspoons Baking Soda
    4 cups Grated Carrots
    1 cup Golden Raisins (Optional)

    For the icing and garnish:

    2 x 8 0Z cream cheese
    7 oz icing sugar, sifted
    grated zest and juice of 1 orange
    2 oz chopped walnuts

    Method

    1. Heat oven to 350d/180c/gas 4 then grease & flour 2 - 9 inch round cake tins.
    2. Take a large mixing bowl & beat eggs until foamy
    3. Add oil in slowly & beat well.
    4. Combine flour, sugar, cinnamon & soda together & add to egg mixture, stir well.
    5. Fold in carrots & raisins, tip into prepared cake tins & bake 30-35 minutes or until golden brown.
    6. Leave to cool for 15 minutes in cake tins then invert on wire rack to cool.

    To make the icing:

    1. Sift the icing sugar into a bowl, add the cream cheese, mix together until well combined
    2. Add the orange zest & some of the juice to taste. Be careful not to add too much juice as the icing will become too runny.
    3. Spread it over the top of the cake & sprinkle the top with chopped walnuts. Keep refrigerated.

        You could adapt by adding chopped crystallised ginger and some dry ginger as a spice.
        Or was it a dark ginger cake you were thinking of?
        Whooops - now what are the dogs getting up to?

          Thanks Jeanie, thats an idea. Maybe I could put a bit of crystallised ginger on the top of the cream cheese topping.

          Im sure my friend was thinking of the classic carrot cake but with some ginger in it. They are all her favourite things and the carrots in it were for her horse to have some, although I sure she was joking about this part ha ha

            Sorry...forgot to add the 2 teaspoons of ginger . Recipe has been rectified.
