It was actually a recipe using aubergines but works just as well with gherkins....
500g diced gherkins
3 green chillies chopped
1 clove garlic crushed
150ml of white wine or cider vinegar
1/4 tbsp chilli powder
1/4 tsp ground turmeric
75ml sesame oil
1/4 tbsp cumin seeds
1/4 tbsp fenugreek seeds
1/2 tbsp salt
55g sugar
1cm pice of ginger grated(preserving juice)
Mix the garlic and ground spices with 1/2 tbsp of vinegar to form a paste. Heat the oil and fry the whole spices for 1 minute. Add the spice paste and stir over a low heat until the oil floats to the top. Add all the remaining ingredients and again stir on a low heat till the oil floats to the top.
Put into hot sterilised jars and seal.
Leave for one month before using.
