  • bread rolls

    Hi all,

    I made some rolls last night. The only thing is the bottom of them is really stodgy. The top is just right but there is a line at the bottom of this wet stodgy bread. I've never had it before but any ideas as to why its happened?

    I can take a piccy if it will help.

      How odd! Were they in some kind of a tin? Or on a flat baking tray? Whereabouts in the oven did you bake them?

        Maybe not hot enough. I've had this with things baked on ceramic bakeware instead of metal - which does get hot. It also may not quite have proved enough.

          I always turn mine over and cook them upside down for five mins so they are solid on the bottom....maybe this would help??

            Im not sure, they were cooked in the middle of the oven on metal baking trays. Made some today and they were fine. How strange.

                They don't look fully risen to me - maybe the cold weather got to them.
                Whooops - now what are the dogs getting up to?

                  Too much water and not enough rising time (or duff yeast) and as Jeanied says, possibly too cold before being baked.
