What are you tried and tested egg recipes? I've had a search around, tried a few but nothing really shouts out at me (bar eggs benedict! - yum).
Pref something that's suitable for young children and pregnancies.. before now I'd have made mouses, etc but anything with raw, or lightly cooked eggs can't be consumed bar myself at the moment! I make the usual, omelets, fritatas, quiches, different eggs (on toast) for example but that's about it cooking wise.
I get 3 eggs a day at the moment from my chickens - looking perhaps to up this to 6 eggs in the spring if I can get 3 more chickens past the wife!
Baked eggs look good, may try them this weekend - but keen for my wife to eat some eggs as she's suffering at the mo with her pregnancy and hardly keeping anything down- they appear to contain a lot of goodness so if I can combine them with a food with high folic acid content that'd be a benefit too (mushrooms?). She's gone off the idea of omeletes and scrambled eggs.... so if I can disguise them in something all the better
