bread in a casserole dish

I have been really getting into making bread and keep being told about making it and then baking it in a casserole dish. Has anyone tried it?

Also, whilst Im here, I can make normal loaves but my only attempt at making a cob when it done its second rise it spread outwards and filled the baking tray. Was my mixture to thin or did I shape it in the wrong way etc?

You can bake bread in a great variety of containers. Flowerpots have been used (clay ones, very clean, of course) so I can't see any reason why a casserole dish should be a problem. Non-tin loaves often spread out rather than rise. Usually the mix is either just a bit too moist, or not kneaded enough, or possibly not strong enough flour, but sometimes the dough seems perfect, but it still spreads! Usually tastes good, so why worry?

thats the nice thing about home made bread; it comes in all shapes and sizes and isnt cloned to fit in a bag and on a shelf like supermarket stuff.

So I made potato bread, in the casserole dish, it came out great except for a stupid mistake I made. I forgot what temperature the oven was on and ended up cooking it too high so the middle was still gooey but hey. I have cut off all of the outside as it is good and chucking away the gooey bit.

That's why I use a cake tin. Because it's metal it heats up thoroughly - I just feel more confident that it will cook ok.

Another time, if they get patronising about the bread not rising, remind them that no-one is obliging them to eat it, or ask whether thay think they can do better, or both (I would probably say something like "Oh, so you won't want any of it then?").

To be perfectly honest, there very presense causes me a headache. So I just grrr under my breath. Occasionally I bite but I try and rise above it.

I think a covered casserole dish is brilliant in replicating a very hot bread oven temperatures, so you get a really crunchy crust. However, because you need to put your prepared dough in a pre-heated dish, the method is really only suitable for the no-knead bread types, like in this link: No Knead Bread: so easy a 4-yr old can make it! | Steamy Kitchen

I use a Pyrex casserole dish for the above recipe and it works really well.
