I made some onion bhajis and vegetable pakoras last night - very yummy though I say so myself! Having deep fried them, what do I do with the left over oil now? I've filtered it through a coffee filter, and it's in a clean pot. Will it keep ok, and for how long? Does it have to go in the fridge?
Sorry for these basic questions, but although I've cooked for years, I've never actually deep fried anything until now!
