  • Crisp Batter

    I haven't made battered cod and chips for years until yesterday. The batter was crispy when I took the fish out of the pan, but it went a bit soggy as it sat on the plate waiting for the chips (which I'd 3/4 cooked). Any tips please?

    Splash of vinegar in your batter Flo...works wonders and make's your batter really crisp.

      yep or splash of alcohol...beer, vodka etc
      Place it in a warm oven whilst you wait for your chips!

        I do the chips first and pop them in the oven as they are less prone to sogginess than batter. And eat fast!

          If it has to wait for the chips, put it on a rack, or at least on paper-towel, rather than direct onto the plate....
          If the chips are waiting for the fish, put them on a metal dish while keeping warm.
          Flowers come in too many colours to see the world in black-and-white.
