I often see recipes with Talleggio cheese - what can I use as a substitute? I've never seen it for sale here.

Just had a quick 'Goggle' for you;
... use Fontina cheese...it has good melting qualities and is less pongy than Taleggio. If it doesn't have to be an Italian cheese you could also use Gruyere, Gouda, Edam or Emmentaler cheeses...All the best - Glutton 4 Punishment
