I've just made some of this and it's very yummy. I wanted to eat it all up straight away, but I'm a good girl me . Not my recipe.
Ingredients
4 ozs Butter
8 ozs Granulated sugar
2 Lemons ..rind and juice
2 Large eggs
Method.
Use a bain marie or a heatproof bowl that fits snugly onto a saucepan.
1. Place boiling water into the saucepan to about one third full. When the bowl is placed on the top of the pan, the water should not touch the bottom of the bowl, adjust as neccesary.
2. With the water in the pan just simmering gently, add the butter to the bowl, add the sugar, stir occasionally with a wooden spoon, allow the butter to melt and the sugar to disolve in it, this usually takes about 10 mins. Add the grated lemon rind and the lemon juice, stir.
3. When well combined beat the eggs well and then pass through a sieve and add to the butter/sugar/lemon mixture in the bowl.
4. Stir well, keeping the water in the pan at a gentle simmer. Let the mixture slowly "cook" for 15 mins, just stirring from time to time.... no need to stir continually....
It is ready to pot when thick enough to coat the back of the wooden spoon.
Pour into a warmed, sterilized pot and allow to cool. Enjoy.
