stuffed baby patty pans

hi guys.

ive noticed in a few deli's that they've started selling little baby patty pans, stuffed with some kind of stuffed cheese. ive just had some today and they were mildly pickled too but still had a crunch and they were lovely. i was wondering if anyone had a recipe for these?
