I was going to save this, and tell you about it on my Sunday evening weekly blog update, but I made it last night for Trousers with some not cheap Salmon, as a treat, and I thought it was worth sharing with you, because these pancakes are truly, truly delicious.
Note to self: get a new and 'proper' crepe pan luv.... you make enough of them, and it's time that you ended up producing top banana crepes that don't stick.
(Momentarily leaving laptop to put dinner on a plate for Trousers, then coming right back to post up the recipe).....(8.36pm)
(9pm) : Ingredients:
60g plain flour, 30g rice flour, slightly rounded half teasp table salt, 1 large egg, 1 large egg yolk, 1 small red chilli, pinch ground black pepper, 4 drops toasted sesame oil, veg oil for frying, 5-6 spring oinions, small bunch fresh coriander, roughly chopped.
(9.10pm): Method:
Put the flours, salt, egg and yolk, 200ml water, chilli, pepper and sesame oil in a bowl and whisk . Leave to rest for at least 30 mins, then just do what you normally do with a pancake in a frying pan 'kind of thing' !
I'm a girl that can't stand the smell of an omlette a mile off, and I said to Trousers last night that I could eat one of these every day?
And at precisely 15 minutes past 9 o'clock, I've just tried to post this thread to you on the Grow Your Own Grapevine Forum, and I've been told that this site is not now available, once again.......
